Soba is the perfect vegan food

My family and I went to a soba noodle restaurant in our neighborhood.

It’s called Yaoki Soba restaurant in Jindaiji with a small Japanese garden.

I like to eat soba for lunch.

What is Soba

Unlike udon or rice, soba is ground without refining, which makes it extremely nutritious.

In rice and wheat, the germ part is removed and only the endosperm is used.

In the case of buckwheat, the nutrient-rich germ is located in the center of the fruit and cannot be removed.
